I love cooking for my family during the holidays, It feel like a gift I give them. So I try to keep the decor simple. I celebrated Easter with my family by creating a simple but colorful tablescape with blue hydrangea with a mixture of other simple flowers. The centerpiece had a mixture of random glass jars filled with the flowers.
The menu for Easter dinner consist of home-made Chicken Orzo Soup, Cesar Salad with home-made croutons and freshly made pasta with chicken cutlets.
HOME MADE ORZO CHICKEN SOUP
1 whole chicken
3 cans of broth
1 cup of dice onions
1 cup of d iced celery
1/2 cup of orzo pasta
salt to taste
In crock pot the day before event add the chicken, broth, onion, celery and salt to taste. Cooks about 8 hours. Take chicken out de-bone it and add the white meat to broth. Cook the orzo separate and add to broth.
HOME MADE CROUTONS
Cut up the bread in mini squares. coat with olive oil and smother with garlic. Add salt to taste. Bale until brown.
For the main course chicken cutlets and Home Made Pasta.
